Baked Fish

Fried fish is probably my all time favorite dish, especially when eaten with rice and daalithoi (Konkani Daal).  When I was growing up, we usually ate salt water fish and my mother either fried the fish or prepared a delicious fish curry.  I tried baking fish with Indian spices but I found that the spices did not really cook all the way through and left a raw taste.  This is a very simple recipe that I came up during my experiments and the end result is pretty delicious!

Ingredients

  • Fish fillets (Tilapia) - 1 lb
  • Chilli Powder - 1 tsp
  • Olive oil - 1 tsp
  • Lime juice - 1 tsp
  • Pepper powder - 1/4 tsp
  • Mayo - 1 tsp
  • Salt to taste

Instructions

Wash the filets and pat dry

Mix all the ingredients and marinate the fish in the mixture for a couple of hours

Pre heat the oven to 350 F

Place the fish filets on a grill, place a tray below to collect the drippings

Bake the fish for about 7 minutes and then flip the fish over

Bake for another 5 minutes.

Turn on the broiler and broil for a couple of minutes (don't overdo this or the fish will dry out)

Serve hot with lime wedges and red onions.

Note:

I substitute the mayo with Trader Joe’s Wasabi mayo, this imparts a kick to the fish, don’t overdo it though, since the wasabi packs quite a punch.
