Spicy Chicken Fry

This dish started out as my Chicken Curry, I had marinated boneless chicken thighs for the curry.  It was very cold outside and we were in the mood to eat something dry and spicy.  Since I already had chicken marinated, I thought I’ll try out something new.

Ingredients

  • Boneless chicken thighs - 8, cleaned and cut into bite size pieces
  • For marinade:-
  • Yoghurt - 1/4 cup
  • Green chillies - 7 (more or less depending on your taste)
  • Cilantro - 1/2 bunch
  • Mint leaves - 4 sprigs
  • Garlic cloves - 5
  • Ginger - 1" piece
  • Turmeric powder - 1/2 tsp
  • Salt - 1/2 tsp
  • For the fry:-
  • Oil - 3 tbsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Onions - 2, large, finely chopped
  • Dry red chillies - 5, broken into two pieces
  • Curry leaves - 2 sprigs
  • Ginger garlic paste - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Black pepper powder - 1 tbsp
  • Coriander cumin powder - 3/4 tsp
  • Garam masala powder - 1 tsp
  • Salt to taste
  • Cilantro - finely chopped, for garnish

Instructions

Finely chop the cilantro and mint leaves.

Using a food processor, mince ginger, garlic and green chillies  finely.

In a bowl, mix the chopped greens, minced ginger, garlic and green chillies mixture, yoghurt, turmeric powder and little salt.  Put in the cut up chicken pieces and mix well.  Marinate this mixture for a couple hours or overnight preferably, if you have the time.

In a flat bottomed pan, heat oil.  Season with mustard seeds.  When the seeds splutter, add the cumin seeds.  Also put in the curry leaves and dried red chillies.

After a few seconds, add the finely chopped onions and fry till golden.

Put in the ginger garlic paste and fry till fragrant.

Add the turmeric, black pepper, coriander-cumin and garam masala powders respectively and mix well.

Fry for a couple of minutes.

Add the marinated pieces of chicken, mix and fry on medium high till well browned.

Add salt to taste and cook till done.

Garnish with finely chopped cilantro.

Serve hot as an appetizer or tastes very good with white rice.

Note:-

  • Go easy on the salt as salt is added while marinating the chicken pieces.
  • This dish tastes very well if you can use freshly ground black pepper powder.
